At Hanagoyomi Tokyo, our chefs — who carry on the traditions of our hotel’s culinary artistry — present a seasonal course that brings out the full appeal of fermented ingredients, including koji.
Begin with a toast: a freshly made cocktail of fermented lemon pepper and unrefined sake.
Gentle on the body and designed to be savored at a relaxed pace, this experience invites you to enjoy the deep umami unique to fermented cuisine and its pleasantly lingering finish.

Price:¥5,000 per person (food only)
The course begins with a selection of appetizers that allow you to enjoy the charm of fermentation in small, refined portions, such as low-temperature cooked pork shoulder with salted rice malt and Nara pickles cream cheese. The main dish features seasonal fish served as shabu-shabu in a rich, aged dashi broth, followed by sake lees raisin ice cream, finished at your table.
This short course includes four dishes that highlight the appeal of fermentation, along with a welcome drink.
Start with the fermented cocktail, then enjoy selecting beverages of your choice to pair with each dish.
An all-you-can-drink option is also available for an additional ¥3,500.
