Ryumeikan Rice Is Here Again This YearEnjoy newly harvested rice from Takahata, Yamagata, with our kaiseki courses
This year’s Ryumeikan Rice was grown in Takahata, Yamagata Prefecture.
Surrounded by mountains, Takahata is located in a basin with hot summers and cold winters. Its significant seasonal temperature differences have made it an ideal area for rice cultivation for generations.
This year, we are pleased to bring you Haenuki rice grown in this rich natural environment as our Ryumeikan Rice.
Haenuki is known for its distinct grains and fluffy texture, with a delicate sweetness and rich umami flavor that develops with every bite.
The rice is carefully grown by dedicated farmers using reduced amounts of pesticides and without additional fertilization during cultivation. After harvesting, it is gently dried using far-infrared technology.
Akira Zeniya, head chef of Ryumeikan, also visited Takahata to take part in rice planting and harvesting, witnessing the rice grow from young seedlings into mature ears of grain.
As we did last year, we have named this newly harvested rice Ryumeikan Rice. Starting Nov. 4, it will be served as the rice dish in our kaiseki courses.
Our chefs carefully wash the rice before cooking it in a traditional rice pot over a direct flame, bringing out its natural flavor.
We invite you to savor this delicious rice, nurtured by the climate of Takahata, Yamagata, and the dedication and craftsmanship of local farmers.
*Please note that Ryumeikan Rice may not be served with certain kaiseki courses depending on the menu. For details, please contact the restaurant directly.
