Kaiseki is dishes that are served for a banquet.
It is the most formal course of Japanese food.
A lot of people misunderstand Kaiseki as other Kaiseki, but the other Kaiseki is to enjoy tea,
but this Kaiseki is to enjoy Sake.
Japanese food must be creative as well as traditional.
We put our effort to serve the guests, so the guests can enjoy the dishes.
He started training as an assistant chef in Tokyo at age of 19,
At age of 31, he becomes a souschef for the restaurant in Ginza.
In 2011, he became a exective chef of our Hotel Ryumeikan Tokyo "Hanagoyomi Tokyo".
His hobbies is darts.
